Roasted Cauliflower Soup


So yesterday we went to my grandparents and and enjoyed some amazing roasted cauliflower soup! I always love visiting them and learning some new recipes to take home with me! 

Roasted Cauliflower Soup
1 Cauliflower (cut into small pieces)
1 white onion (cut into medium pieces)
2 carrots (cut into slivers)
4-5 cloves of garlic (smashed & diced)
Roast in a shallow pan (coat & toss veggies in olive oil - 2 TBS)
Season with Seasoning Salt & Spices
Roast at 350 for half an hour - tips will blacken slightly

Saute a half an onion & 4 ribs of celery - medium diced in 2 TBS Olive Oil & 1 TBS Coconut oil
Season with salt & pepper 
Add 1 litre of Chicken Broth (Low sodium)  & 2 cup of Coconut Milk or Milk
Simmer for half an hour on low heat.  Thicken with 2 TBS of corn starch & 1/4 cup of water & mix into soup slowly & stir.
Add chopped fresh parsley & paprika.   Sprinkle with sharp cheese of choice before serving.(Optional)
