  • Chicken and Black Bean Burrito Salad in a Mason Jar


Total Time: 20 min.
Prep Time: 20 min.
Cooking Time: None
Yield: 4 servings

Ingredients:

½ cup fresh lime juice
2 Tbsp. + ½ cup coarsely chopped fresh cilantro, divided use
1 clove garlic, coarsely chopped
1 medium jalapeno, seeds and veins removed, coarsely chopped
1 Tbsp. extra-virgin olive oil
2 cups canned black beans
4 oz. shredded cooked chicken breast
1 cup chopped jicama
½ cup thinly sliced radishes
1 cup thinly sliced red onion
1 cup halved cherry tomatoes
¼ cup shredded cheddar cheese
8 cups chopped romaine lettuce

Preparation:
1. Place lime juice, 2 Tbsp. cilantro, garlic, and jalapeno in a blender; cover. Blend until smooth.
2. Slowly add oil, blending continuously, until well mixed. Evenly divide dressing between 4 one-quart Mason jars. Set aside.
3. Evenly layer beans, chicken, jicama, radishes, onion, tomatoes, cheese, lettuce, and remaining ½ cup cilantro on top of dressing in jars.
4. Serve immediately or cover and refrigerate for up to 3 days. Shake before serving.




  • Chicken Ciabatta Sandwiches

Make your own delicious chicken patties seasoned with garlic and spices and build them into a memorable sandwich with Swiss cheese and whole grain ciabatta rolls.

Total Time: 27 min.
Prep Time: 15 min.
Cooking Time: 12 min.
Yield: 4 servings, 1 sandwich each


Ingredients:
1 lb. raw chicken breast, boneless, skinless, cut into chunks
1 medium carrot, grated
2 green onions, finely chopped
1 clove garlic, finely chopped
1 tsp. fresh lemon juice
1 dash ground white pepper
½ tsp. ground cumin 1 tsp. olive oil
4 whole grain ciabatta rolls, cut in half
4 tsp. Dijon mustard
8 slices medium tomato
4 thin slices medium red onion
4 thin slices Swiss cheese (about 1 oz.)

Preparation:
1. Combine chicken, carrot, green onions, garlic, lemon juice, pepper, and cumin in food processor; mix until combined.
2. Form chicken mixture into 4 patties. Set aside.
3. Heat oil in large skillet over medium high heat.
4. Add patties; cook for 4 to 6 minutes on each side, or until chicken is cooked through. Remove from heat.
5. Top bottom of each ciabatta with 1 tsp. mustard, chicken patty, 2 tomato slices, 1 onion slice, 1 slice of cheese, and top of each ciabatta.


  • Pork Carnitas Recipe



Ingredients:

3 lbs of Pork Loin
1 bay leaf
1 1/2 cup of water


To make the rub combine:

2 tbsp of chili powder
2 tsp of cumin
1 tsp of ground coriander
1/2 tsp cloves
1 tsp onion powder
1 tsp garlic powder
1 tsp sea salt
1 tsp oregano


Directions:

Mix all spices together except the bay leaf in a bowl.
Rub down the entire pork loin with the spices and place in your slow cooker.
Add the bay leaf and water and cook on low for 6-8 hours. Keep an eye on the pork just to make sure the water doesn't absorb and it dries out. If you have to add more liquid please do.
Your pork should pull apart easily so you can shred it.

Once you it is able to be shredded take it from the crock pot, shred and then place back into the crock pot. Stir the meat to coat with the juices.

You can fill a red container with this for the 21 day fix!

For the Carnitas you will need:

Corn Tortillas
Black or Pinto Beans in a can
Romain Lettuce
Diced Tomatoes
Diced Avocado
Shredded cheddar cheese


Cilantro Lime Topping (Do not omit this, it is what makes the whole thing just amazing)

Greek yogurt
1/4 Cup Fresh Lime Juice
1/4 Cup Fresh Cilantro Chopped
1 lime cut into wedges for garnish


Combine these ingredients in a bowl for the dressing and set aside.

Add the drained beans with 1/2 of a cup of water to a pot on the stove over medium heat. Cook until heated through. Gently mash with a fork until they reach your desired consistency.

Lightly spray your corn tortillas with cooking spray and place on a foil lined baking sheet.
Crisp in the oven on 350 degrees for 8-10 minutes until desired crispiness.

Next step is to assemble the goods!

So take your corn tortilla and add your fixings to make yourself a pretty sweet Carnita. 
Add a dollup of the dressing on top and enjoy!

  • Pesto Goat Cheese veggie Wrap


Ingredients: 
Goat cheese
Pesto
Cucumber
Grated carrot
Tomatoes
Whole wheat wrap
Directions: 
Spread one blue containers worth of goat cheese on your wrap as well as a 1/2 table spoon of pesto. 



Lay cut tomato and cucumber on top of the cheese and pesto. 

Then the grated carrot next. 

Wrap it up and enjoy! 



  • Turkey black bean lettuce wraps
What's for Dinner tonight?
Maybe these.....


Turkey black bean Lettuce Wraps
Ground turkey or Chicken
4 TBSP low sodium soy sauce
1 clove garlic minced
1 shallot minced
1 tsp black bean sauce (optional)
I small zucchini Chopped into cubes
1/2 cup (measured when uncooked) cooked brown rice (optional)
1 head of butter lettuce (I got the kind that has the roots attached)
Marinate Ground turkey in soy sauce.
In large frying pan or wok brown garlic and shallot in sesame oil. Add in ground meat and cook through. While cooking, tear your lettuce and place on plates.
You can add in a tsp of black bean sauce for flavour or just keep it to the soy sauce. Throw in Zucchini near the end of the cooking process when the rice is almost ready to go in. Add in cooked rice. Stir for a couple minutes until sauce coats rice. Add more soy sauce if dry. The mixture should me moist but not too saucy.
Serve filling in side bowl with lettuce wraps on the side. Be generous with lettuce for each person.
