Turkey Cabbage rolls

I said I would post my recipe for the turkey cabbage rolls... and I always keep my word so here it is! 

This was my first time making cabbage rolls. I'm all about trying out new recipes before baby comes so I can make huge batches on Sundays and freeze them. This one has been approved to the list and best part.. it's healthy! 

Ingredients 
-1 medium green cabbage
-1 pound ground turkey
-half cup brown rice 
-2 cups spinach 
-half cup chopped mushrooms
-2 small cloves garlic 
-1 yellow onion
-extra virgin olive oil
-fresh basil
-fresh oregano
-maranara sauce
-fresh cut tomatoes
-sea salt and pepper to taste 

In a medium skillet add 1 TBS of olive oil. Add garlic and mushrooms. Once soft add in spinach and cook down for about 4 mins, put in a bowl and let cool. Brown onions in thr skillet until soft, put those aside to cool as well.  Chop up spinach and mushrooms.ans add to onions. In a large pot add water and salt and boil.  Once boiling put in head of cabbage (remember to cut the stock off so it peels easy) every 5 mins a layer of leaf should easily come off... repeat until you have necessary amount for cabbage rolls. 

Mix the spinach, garlic and onion mix in with ground turkey. Chop up fresh basil and oregano and add into mixture. 

Dry the cabbage leaves and cut a triangle into the bottom to get any left over stem. Scoop a spoonful of the turkey mixture into the leaf and roll tucking in sides.  Lay into a lightly greased pan. 

Once you have all the rolls complete spoon over tomatoes and maranara sauce onto the rolls. 

Cover with tinfoil and bake at 375 for 1 hour. 

Let cool and enjoy :)
